Pasta con le sarde

Since I couldn’t sleep (yes, i haven’t slept since last night), I decided I was hungry and cooked breakfast. It wasn’t my plan to have pasta for breakfast, but when I opened the fridge and found some left over pasta, I went to the pantry and looked for something that would go well with pasta. My choices were corned beef, corn, corned tuna and sardines.

Before, I already made pasta with corned beef and it didn’t appeal to my taste. Corn, well, I don’t have all the ingredients. So I went with the sardines. I have seen pasta with sardines before in high end restaurants and thought, maybe I could make my own version. So viola! I experimented again.

PASTA CON LE SARDE

INGREDIENTS:

One can of sardines (preferably hot n’ spicy. the one with tomato sauce)
Cooked pasta
Onion (sliced/diced/minced your choice)
Tomatoes (lots of tomatoes. cut them whatever you want. dice/slice/mince)
sugar
pepper
salt
olive oil

All of these ingredients you can find in your kitchen/pantry

PROCEDURE:

  • Heat the olive oil
  • saute the onion and then add a little bit of sugar
  • toss in the tomatoes
  • add in the sardines
  • put in a little pepper, a pinch of salt and a pinch of dried rosemary (rosemary makes the whole thing smell good)
  • toss in the cooked pasta and then mixed them all together.
  • put in a pinch or two of dried basil and continue mixing
  • then its ready to plate

PREPARATION:

Put a small amount on a place. Add some fresh basil (or parsley) on top for garnish. SERVE HOT!

Optional:

  • Parmesan Cheese
  • Shrimps
  • Bacons

At first, I was a little hesitant because it was my first time actually making pasta with sardines and I thought it wouldn’t taste good. But then I thought, “It would be a waste if I didn’t eat it so might as well try it,” and viola! I was amazed! It was good. I mean really good. I can smell the aroma of the rosemary. The onions were sweet. I paired it with a glass of milk. But I bet red wine would be much better.

Disclaimer: The photo is not mine. I just google-d it. It would look like this when you’re done cooking. Well, almost like these if you have red tomatoes. I used orange ones. 😀
